Goulougous Soup

Goulougous SoupA tomato based soup, made with the root vegetable of colocasia, or goulougous. Malanga or Taro are used to prepare this red soup, with beef (optional) and lots of garbanzo beans (chick peas).

Ingredients

  • 2 lbs colocasia (Malanga or Taro)
  • 1 lb stew meat (beef or lamb)
  • 16 oz (1 cup) garbanzo beans, chick peas
  • Salt
  • 1 Bay leaf
  • 1/4 tsp ground black pepper
  • 1 cup lemon juice
  • 2 Tbs unsalted tomato paste
  • Water
